meet chef rodrigo

Chef Rodrigo Abrajan began his culinary journey at just 8 years old, cooking for his siblings in his hometown. By 11, he was working at a fonda, and in 1993, his cousin and mentor Jose “Popeye” Grande introduced him to the street taco business—igniting a passion that would define his career. From working in top New York kitchens to founding taquerías and now leading El Paso, Chef Rodrigo has always stayed true to traditional Mexican cuisine, sourcing authentic ingredients like sea salt from Mexico to preserve the flavors he grew up with.
Deeply connected to his roots, inspired by family, and driven by a love for fresh ingredients, Chef Rodrigo invites guests to experience the true taste of Mexico— now rolling through the Tri-State area on the El Paso on wheels: El Paso Truck.

  • TOTOPOS AND GUACAMOLE

    Crispy nixtamal corn tortilla chips, 5oz fresh guacamole and salsa verde

  • TACOS (2)

    nixtamal corn or flour tortilla, onions, cilantro, salsas

  • Protein options: Shiitake Mushrooms / Grilled chicken

  • BAJA TACOS

    grilled mahi mahi fish, coleslaw with mango, habanero aioli

  • SHORT RIB TACO

    braised short rib, watermelon pico de gallo, pineapple BBQ chipotle sauce

  • BURRITO BOWL

    cilantro white rice or Mexican rice, black beans, romaine lettuce, pico de gallo, cheese, sour cream, salsas

  • QUESADILLA

    nixtamal corn tortilla or flour tortilla, aged Vermont cheddar and chihuahua cheese, salsas (Oaxaca cheese upon request)

    Grilled corn off the cob, habanero aioli, lime juice, age cotija cheese, morita chile, limon

  • ELOTE DOMINGUERO

    Corn on the cob, lime juice, McCormick mayo, cotija cheese, smoke morita chile-limon (cut in half)
