MEET FABIAN
Chef Fabian Marquez always had a knack for cooking. He grew up watching his grandmother and great grandmother spend hours in the kitchen, filling the house with a sweet aroma made up of all the different Peruvian flavors. Fabian knew he wanted to continue in their footsteps, so he attended the Art Institute of New York City, after which he continued as the chef de cuisine at an award-winning Italian restaurant owned by an Iron Chef. But, after watching the movie “Chef,” he realized his dream was to reconnect with his Peruvian roots and share his passion for Latin cuisine with the world. He wanted to open his own restaurant where he could put his grandmother’s recipes that he learned as a child to use. So that’s when he started Latusion food truck, making it his mission to have everyone appreciate authentic Peruvian food as much as he does.
