MEET MIKE & CHRISTIAN
Mike Paolercio and Christian Prior have known each other for over 25 years. Christian has a Culinary Management degree from the Institute of Culinary Education (ICE) in Manhattan and formerly held General Manager positions at Shake Shack and Public House NYC. Mike and Christian combined both of their mother’s traditional family recipes to create the menu for MAC’s food truck to serve up the best Italian Catering in New York. Together they created their dream menu serving Italian-American comfort food including Meatball Parm, Chicken Parm, Eggplant Parm, and Sausage & Pepper heroes.
